Citric acid is in the arsenal of any housewife. It is added to dough, marinades, compotes. This is a great alternative to vinegar when you need to acidify a dish without the vinegar smell.

Housewives often add citric acid to okroshka. When okroshka was made with kvass, there was no need to acidify it. But recently it has become fashionable to make okroshka with mayonnaise, kefir, and sour cream. When these ingredients are diluted with water, the okroshka turns out to be fresh. This is where citric acid comes to the rescue.

Subtleties of cooking

  • The water for okroshka needs to be boiled in advance and then cooled. Those housewives who use raw water for okroshka act short-sightedly, believing that citric acid will kill microbes. Raw water mixed with fresh cucumbers can cause stomach upset. And okroshka made from raw water is stored much worse.
  • In order not to overdo it with citric acid, it should be diluted in a small amount of boiled water and then added to the dish at the very end of cooking. All ingredients at that time must be mixed together and combined with liquid - water mixed with mayonnaise or sour cream.
  • Citric acid can be diluted in the full volume of water, adding enough of it so that the water acquires a pleasant sour taste. After this, the chopped vegetables are diluted with water in the same way as they do with kvass.
  • Okroshka with citric acid is prepared according to the standard procedure. Vegetables and other products should be cut into equal pieces: cubes, strips or slices. Then the okroshka will look more appetizing, and the ingredients will combine better with each other.

Step-by-step photos of the recipe 1. We love the most ordinary classic okroshka. Everyone always throws in the approximate amount of ingredients, so to speak, by eye, I weighed my ingredients so that you can get exactly the same okroshka as mine :)
So, we go to the sea and catch fish :))) And we go to the garden and dig up young potatoes, to make cold soup you need to carry out 3 hot procedures :)))) we don’t peel the potatoes, but give them a good scrub with a brush and let them cook, salt them after boiling.
2. On the way from the garden, we go into the chicken coop and take 4 fresh eggs, set them to boil
3. And, of course, there)))) we take the chicken breast, set it to cook, salt it with delicious salt and spices “7 courses” after boiling.
4. Finely chop the greens, sprinkle with a pinch of salt and grind a little. In okroshka I only like green onions and dill; the other herbs overwhelm the whole taste, in my opinion.
5. My mother always grates 1 piece of each ingredient, I just chop the cucumbers very, very finely.
6. and radishes
7. Finely chop the egg whites and grate all the yolks on a fine grater.
8. Chicken fillet
9. And potatoes...
10. It is important to first add sour cream and mix a little with the food, and not vice versa water, then sour cream, in this case the sour cream may float in the water in flakes.
11. Squeeze lemon juice, my granddaughter helped me do this, he really likes squeezing juice from citrus fruits :)))
12. A juicer will always produce more than your hands.
13. Add filtered very cold water, as much as needed so that the soup is not too thick, but not runny either. Salt, add sugar and let stand for a while.
