I tried my first Korean chicken heh while visiting a real Korean woman. I must say that until that moment I was quite skeptical about all the heh salads that could be bought at any point in the market, and I had never been an ardent fan of such salads. But this one captivated me literally from the first bite! It's just a celebration of taste! Moderately spicy, slightly sour, with ideal proportions of chicken and vegetables. Of course, the recipe ended up in my notebook that same day! Using this recipe, I was able to cook delicious Korean chicken heh the first time. I took a photo of the recipe so that you can see for yourself that the cooking process is not at all complicated. At least much easier than I thought. I want to warn you right away - chicken for heh is not boiled or fried, it is marinated raw, so be very careful when choosing chicken in the store. It must be absolutely fresh and from a trusted manufacturer.

Ingredients:

  • chicken fillet – 500 g,
  • carrots – 200 g,
  • onions – 180 g,
  • vinegar essence - 1 tbsp. l.,
  • Korean carrot seasoning – 2 tbsp. l.,
  • vegetable oil – 4 tbsp. l.,
  • salt and ground black pepper - to taste,
  • sesame seeds – 1 tsp. (upon submission),
  • fresh cilantro – 10 g (when serving).

How to cook chicken heh in Korean

First of all, rinse the chicken fillet, dry it and cut it against the grain into fairly thin strips. If you have problems cutting the fillet (warm meat sometimes becomes capricious and literally falls apart under your fingers), you can keep it in the freezer for about 15 minutes.


Next are vegetables. We clean them, wash them, dry them and chop them. Chop the carrots into long, thin strips. A special Korean-style carrot grater copes with this task perfectly. If you don't have one, a regular grater with large teeth will do. The appearance of the carrots, in my opinion, will no longer be so pretty, but this will in no way affect the taste.


We cut large onions into half rings or quarters (if the heads are quite huge), small ones can be cut into rings.

Place the prepared vegetables in a bowl with the chicken.


Season with vinegar essence.

Afterwards, heat the vegetable oil in a frying pan until it smokes slightly, then season the heh with this hot oil.

Mix the contents of the bowl thoroughly. We taste the heh, add salt and sourness if necessary. If you suddenly overdo it with acid, you can quench it with a small amount of sugar.

Now the heh should marinate. To do this, cover the container with the salad with a flat bowl, place a weight on this bowl and load it in this form into the refrigerator, where it should stand for at least a day so that the raw chicken meat is certainly marinated. During this time, it is advisable to look into the refrigerator 3-4 times and shake the contents of the container to mix.

After a while, remove the finished chicken heh from the refrigerator. To serve, lightly squeeze the salad from the marinade and place on a plate. Sprinkle with sesame seeds and chopped cilantro or parsley to taste.

Step 1: prepare the chicken fillet.

If our chicken fillet is frozen, defrost it, wash it under running water and let it dry a little. Then, using a knife, we cut it into thin strips, so that during cooking it will certainly not be raw inside.

Step 2: grate the carrots and chop the onion.

After peeling and washing the carrots, we grate them on a special “Korean” grater. We try to cut the onion into as thin half rings as possible.

Step 3: stewing fillet with vegetables.

Take a frying pan, pour 150 grams of vegetable oil into it and put it on fire. After the oil is hot, add all our prepared ingredients to it: fillet, carrots, onions and mix it all thoroughly.

Step 4: add spices.

Let the hee simmer for about 5 minutes and add vinegar, salt, ground black pepper, Korean carrot seasoning and salt. All this is added to taste. Another five minutes of simmering and the dish is almost ready.

Step 5: Cool the dish.


After five minutes of simmering, after adding the spices, transfer the heh from the frying pan to a clean pan and let it cool. As soon as it has cooled down, put it in the refrigerator and cool it completely.

Step 6: serve.

Take the now well-cooled chicken heh out of the refrigerator and serve it to a group of guests. Bon appetit!

Hot heh should not be put into the refrigerator immediately, as this can lead to failure of the refrigerator itself. It’s better to let it cool (take it out onto the balcony), and only then put it in the refrigerator.

The dish can be stored in the refrigerator for up to 4 days. But as a rule, chicken heh is eaten immediately and with great pleasure.

  • Chicken breast – 700 gr.

  • Vegetable oil – 150 ml.
  • Onions – 300 gr.
  • Carrots – 300 gr.
  • Salt – to taste

  • Mix for Korean carrots – 2 tbsp. l

Cooking chicken heh recipe

Wash the chicken breast thoroughly, remove the skin and wipe with a paper towel, removing excess moisture. We cut it into fillets. Cut into small strips about 2 centimeters wide. There is no need to cut it thicker, otherwise the chicken will not marinate. Place the prepared chicken fillet in a deep bowl.


Peel the onions, finely chop them and add to the fillet. If desired, you can take more onion; when marinated, it turns out very tasty and juicy.



Grate the carrots (for Korean carrots or whatever you like) and add them to the bowl with the chicken fillet and onions.



At the next stage of preparing chicken heh, add spices. Korean seasoning for carrots, salt and ground black pepper. Add 1 tablespoon of vinegar essence. All that remains is to boil the vegetable oil. So, boil the oil and pour it into a bowl.



Mix the contents of the bowl thoroughly and compact it. Then cover with cling film and put in the refrigerator for 24 hours. During this time, the chicken heh will marinate perfectly.



Don't think that chicken fillet in a salad will turn out raw and inedible. If you prepare everything strictly according to the recipe, the result will be simply amazing. And you will cook repeatedly heh from chicken.

This dish is a great appetizer for meeting guests or partying with friends. He looks no less impressive on a festive table among savory dishes and snacks. The main taste of a dish is determined by the composition of spices and herbs that are used for its preparation. This can be a classic Korean snack seasoning or a mixture of coriander, paprika, ground garlic and thyme.
Preparing the appetizer is quite simple, because it consists of only a few components - meat fried in spices and chopped vegetables. - seasoning for Korean dishes – 2 tbsp.,

- table vinegar (9%) – 5 tbsp.,
- vegetable oil (deodorized) – 100 ml.,
- sugar – 1 tsp,
- fine salt - to taste,
- soy sauce – 3 tbsp.





We wash the chicken fillet, if necessary, cut off the remaining films from it. Then be sure to dry the meat (if this is not done, a golden brown crust will not form during frying). We cut the fillet into long thin strips.




Heat the oil in a frying pan, add seasoning and hot pepper - this is an important point, because in this way the spices reveal their aroma more vividly.




Place the chopped meat in hot oil and fry the meat over high heat for 2 minutes until golden brown.




Remove the meat from the pan and pour soy sauce and vinegar over it.
Grind the peeled vegetables into long thin shavings. (This can be done on a special grater or with a knife for cutting vegetables). I think you'll like this too.




Lightly salt the vegetables, add to the meat,

I've cooked Korean-style khe several times, but it was always . And only recently I learned that instead of fish, chicken meat is perfect, which can also be marinated with vegetables and get a wonderful, colorful dish and snack at the same time. If you have cooked fresh fish, you know that after marinating the fish becomes salted and incredibly tasty. The same thing happens with chicken: it is marinated in spices, vinegar, oil, and the end result is an appetizer that can be eaten in a few minutes, so it is better to immediately prepare a double portion so that there is enough for everyone. - 400 grams of chicken fillet,
- 1 large carrot,
- 1 large onion,
- 1 tea. l. ground black pepper,
- 1.5 tsp. l. salt,
- 70 grams of vegetable oil,
- 4 tables. l. vinegar,
- 1 tea. l. seasonings for vegetables in Korean.

Rinse the chicken fillet and wipe off the water with napkins. Cut across the grain into long strips. You need to cut with a sharp knife so that the fillet is easily cut.




Peel the carrots using a Korean grater and grate them into long strips. Large carrots are easy to grate using a Korean grater, so use only large fruits.




Chop the onion into half rings. Onions add juiciness and the right spiciness to the dish.




In a bowl, mix vegetables and chicken strips.






Pour vegetable oil over the dish until hot.




Pour vinegar over the heh to marinate all the ingredients.




Season the dish with Korean spices. Mix everything several times so that all components are saturated with aromas.




Cover the bowl with a plate and place in the refrigerator to marinate for 8-10 hours.






Serve the finished dish to the table. Despite the fact that the chicken was originally used raw, it was marinated in a mixture of vinegar and vegetable oil and became edible.
