Turkey meat

  1. You can buy ready-made minced meat. This will save time cooking the cutlets. Moreover, now this product, packaged in vacuum packaging, periodically appears on the market. But, looking at its fairly low price (compared to parts or a whole carcass), one can legitimately doubt the quality of ground turkey. It's better to cook it yourself. At the very least, you will know exactly what it is made of, when it was made, and under what conditions it was made.
  2. What's better to buy? Fillet is the most expensive turkey meat. Grinding it won't be difficult. A thigh or drumstick is cheaper. All you have to do is cut the meat off the bone. But a bone with leftover meat will also come in handy. Boil it in a small amount of salted water with the addition of onions, roots and herbs. In this broth, bake the formed (but not breaded!) turkey cutlets in the oven, and you will have a truly dietary dish.
  3. Choose fresh rather than frozen meat. This way you can evaluate all its organoleptic properties. The pulp should be uniformly pink, elastic, with a slight shine and without any foreign odor. If you buy meat with skin, it should not stick or, conversely, slide. Fresh meat – with dry and elastic skin.

Breadcrumbs

There are seasoned and neutral crackers on sale; the latter are preferable. But if you want to be completely confident in the product, make the crackers yourself: cut the bread into small cubes, bake them on a dry baking sheet (200°C - 15 minutes), stirring occasionally, cool and process in a food processor.

Flakes

You can also use a non-monocomponent composition: manufacturers offer a mixture of various flakes (for example, 7, 8, 9 grains). Using mixtures, you will improve the nutritional value of the cutlets. Those who don’t like flakes can replace them with cottage cheese, bread crumb, grated cabbage or bell pepper.

Step by step recipe

  1. Place oatmeal in a bowl and add milk (whey or water), set aside for half an hour to swell.

  2. Blend the meat in a blender, although you can also cook it.

  3. Chop the onion there, first cutting it into 4 parts.
  4. Add ground coriander.
  5. Add some salt.

  6. Add the swollen flakes to the minced meat and beat everything again until smooth.

  7. Turn on the oven to 200°C.
  8. Cover a baking sheet with foil.

  9. Pour the crackers into a plate.
  10. Form the cutlets with wet hands, roll them in breadcrumbs and place on a baking sheet.

  11. Bake on the middle rack of the oven for 35-45 minutes.

  12. No matter how long you bake the turkey cutlets in the oven, they should spend the last 2-3 minutes on the highest rack to ensure crispiness.

2. The nutritional value of cutlets can be increased by adding cottage cheese to the minced meat, which is not felt at all in the finished product. Replace oatmeal with one egg and 350 grams of cottage cheese.

3. To cook Turkey cutlets with zucchini , it must first be grated, salted, squeezed out of the juice after 20 minutes, mixed into the minced meat and baked in the same way in the oven . This recipe uses medium sized zucchini instead of flakes.

Turkey meat is considered a dietary product. You can cook various dishes from it, including cutlets. These products are suitable for a family lunch or a holiday dinner - it will depend on which recipe you choose. Turkey cutlets in the oven are especially tasty and healthy. Cooking them is no more difficult than in a frying pan or steaming, but they come out rosy, appetizing and juicy. It would not be a shame to offer such a snack to guests; the household will be even more happy about it.

Cooking features

To make turkey cutlets truly tasty, you need to know how to bake them in the oven correctly. Almost everything matters: the choice and preparation of products, the time and method of cooking.

  • You can buy minced turkey meat at any supermarket, but it is better to prepare it yourself from poultry fillet. The purchased product may contain skin and cartilage. You yourself will make minced meat from the drumstick or breast, which will give you confidence in its quality.
  • Fresh and chilled meat will make minced meat more juicy. If using frozen food, allow it to thaw in the refrigerator without trying to speed up the process by immersing it in warm water or heating it in the microwave. A sharp temperature change contributes to a change in the structure of the protein, due to which the properties of the meat deteriorate, it becomes tough and dry.
  • How finely you chop the meat to make cutlets depends on your preference. If you put it through a meat grinder, the cutlets will be more tender. Chopping meat by hand will produce juicier cutlets.
  • To help the cutlets retain their shape better, beat the minced meat on a bowl or board. Excess liquid leaves it, it becomes denser. Eggs, flour, starch, oatmeal, and semolina give minced meat its viscosity.
  • It will be easier to form cutlets if you wet your hands in cold water and cool the minced meat a little.
  • Before putting the turkey cutlets into a pan and baking them in the oven, you can fry them until golden brown in a frying pan. This will make them a little less healthy and higher in calories, but they will become much tastier and more appetizing.

    Product Matrix: 🥄

Good day, dear readers of my blog! Have you already tried cooking turkey cutlets in the oven? Contrary to popular belief about the dryness of the meat of this bird, they turn out very juicy and tender. The main thing is to soften the minced meat with additional ingredients. Minced meat is made from turkey fillet or thigh. To add juiciness, mix it with pumpkin, zucchini or potatoes, add milk, sour cream or cream. You can choose a recipe for every taste: for fat content, make it with pork, for dietary nutrition - with cottage cheese and without adding carbohydrates.

For this option, take a small baking sheet with high sides. Then the gravy will completely hide the meat balls, and they will turn out very tender. Thick gravy will give the meat a pleasant tomato sourness and will complement any side dish well.

Required products for cutlets:

  • 500 g minced turkey;
  • ½ cup oatmeal;
  • ¼ glass of milk;
  • 1 egg;
  • 1 onion;
  • 2 cloves of garlic;
  • ground black pepper;
  • vegetable oil;
  • salt to taste.

For the gravy:

  • 2 onions;
  • 1 carrot;
  • 3 tbsp. flour;
  • 2 tbsp. tomato paste;
  • 900 ml water;
  • 1 tbsp. Sahara;
  • ground black pepper;
  • 1 tbsp. salt.

Step by step instructions:

1. Chop the onion and grate the carrots on a fine grater.

2. Pour oil into the pan and sauté the onion until translucent, then add the carrots. When the carrots are soaked in oil, add flour. Fry, stirring thoroughly for another 2 minutes.

3. Add tomato paste and cook, stirring, for 5 minutes.

4. Pour in water. Stir until smooth so that there are no lumps. Add salt and sugar and pepper. Simmer for 10 minutes over low heat.

5. For now, take care of the cutlets. Beat eggs with milk with a fork. Add oatmeal and leave to swell for 10-15 minutes.

6. Grind the onion and garlic in a blender and add them to the ground turkey. Add the swollen oatmeal here, add salt and pepper. Knead and beat the minced meat - it will become viscous and the cutlets will not crack when baking.

7. Grease a baking tray with oil. With wet hands, form patties and place on a baking sheet. Place in an oven preheated to 200ºC for 15 minutes until the cutlets “set”. After this, pour the gravy over the cutlets and bake for another 20 minutes.

  • 75 ml milk;
  • 1 egg;

Start cooking:
