Due to the warmth of your hands, the dough will become soft and pliable, like plasticine. Aaaaah! It turned out to be extremely simple. Gingerbread comes from the word spicy, in ancient Russian “pypyrian” meant "pepper". And in other languages ​​of the world, gingerbread means peppered cake. In Swedish, for example, it sounds like "peperkaka" In short, she's still a lot of fun!

The main ingredient in gingerbread is honey. Also, real gingerbread cookies are made with caramel syrup. It is he who gives gingerbread this unique taste, which we all know from childhood.

But since December is already a difficult month, we will not complicate our lives with caramel and will prepare gingerbread according to a simple recipe. Moreover, they contain both spices and honey, so we have every reason to call them gingerbread.

I started making gingerbread cookies for the New Year even before the gingerbread BOOM began. Although I myself am not a big fan of spicy sweets, with New Year's gingerbread cookies I just enjoy the process of fiddling around: cutting out beautiful themed figures from the dough, baking them to fill the house spicy aroma holiday, and then paint them with multi-colored sugar icing.

I'm not an expert in glaze painting, and I don't have the time to learn. So everything is primitive and simple for me.

  • Take a deep container and combine all the dry ingredients in it: sifted flour, baking powder, cinnamon powder and ginger powder, then mix everything.
  • In a second container, combine and mix the egg and honey.
  • In a third deep bowl, combine soft butter, kept warm for 1 hour, with granulated sugar and beat with a mixer for 3-4 minutes.

  • Without stopping the mixer, begin adding the remaining dough components. First add the egg and honey mixture.

  • Grind the whites with powdered sugar and one teaspoon of lemon juice until smooth and thick.
  • Then, at the lowest speed of the mixer, mix the icing for 2-3 minutes until it becomes a snow-white, stable glaze.
  • Decorate the finished cooled gingerbreads with thin lines of icing. We assign a contour to each detail, draw tiles on the roofing details, draw a door and an attic window on the front of the house, and draw windows on the façade and rear parts. Let the glaze dry for half an hour.

Now, using the same icing, we glue the parts of the house together, decorate the seams with dotted lines and leave it to dry for 1 hour.

Snowflakes with caramel glass, shining with amber light, will be a delicious addition to New Year's menu. We chose a chocolate-orange dough recipe for these snowflakes. And we will make “stained glass windows” from classic yellow candies.

Ingredients

  • Granulated sugar – 1 tbsp. to the edge;
  • High-grade flour - 3.5 tbsp. without slide;
  • Orange – 1 pc.;
  • Selected egg – 2 pcs.;
  • Butter – ½ pack;
  • Cocoa powder – 1 tbsp. with a slide;
  • Cinnamon – 1/3 tbsp;
  • Ginger - 1/3 tbsp;
  • Ground cloves – ½ tsp;
  • Muscat – ½ tsp;
  • Baking soda – ½ tsp;
  • Fine salt – ¼ tsp;
  • Lemon lollipops – 10 pcs.
  • Wash the orange very thoroughly with soda, and then wipe it dry and grate the orange zest on a fine grater.
  • We cut the fruit itself in half and squeeze out the juice from it. There should be ½ cup of juice. If necessary, add plain water to the required volume.
  • Bring the orange juice to a simmer in a saucepan over medium heat.
  • Place a frying pan on another burner, pour half a glass of sugar into it and, stirring, melt it and bring it to a caramel state.
  • Before the sugar begins to burn, pour boiled juice over it. Mix everything vigorously, add the remaining granulated sugar, orange zest and add butter.
  • Bring the mixture to a boil and turn off. Now it should cool down to 70-60°C.
  • Sift the flour. Pour 1.5 cups into a separate plate and mix with all the spices, salt, soda and cocoa.
  • After the orange syrup has cooled to 70-60°C, beat the eggs into it and add the part of the flour that was mixed with spices. Using a mixer, beat everything until smooth and leave the mixture to cool. Cool to a temperature comfortable for kneading the dough with your own hands (40-35°C).
  • From the warm mass, adding the remaining flour, knead into a plastic dough that falls from your hands.
  • Wrapping it in film, leave the dough to rest in the refrigerator overnight.

You can store this dough in the refrigerator for a month. Ready-made gingerbread cookies from this dough also have a shelf life of 30 days.

  • Roll out the rested dough on a flour table. The thickness of the layer should be no more than 7 mm. Using large snowflake cutters, we cut out the gingerbread cookies, and with small cutters we make holes in the snowflakes.
  • Place the candies in a bag and break them into crumbs with a hammer or rolling pin.
  • Place the snowflakes on a silicone baking mat and place candy crumbs in the holes.

  • Place the baking sheet with the gingerbreads into an oven preheated to 180°C for 8-10 minutes.
  • Leave the finished gingerbreads to cool directly on the mat. Remove them after they have cooled completely and the caramel has hardened.

We paint gingerbread cookies with icing at our discretion. We use thick icing to outline the contour of the snowflake, so the coating of the baked goods will be neat and even. We also make a contour around the holes.

The gingerbread should be filled with a thinner glaze. To do this, add a little water and dye as desired to the already prepared thick icing and mix the glaze thoroughly.
