1. While the cucumbers are soaking for 3 hours, you need to sterilize the liter jars.


2. In each liter we put three sprigs of parsley and dill. A clove of garlic.

Close the lids, turn them over and let them cool naturally. We put it in the basement or pantry for the winter.

Canned cucumbers in tomato sauce without sterilization

This cooking method is much faster than the previous one. And the fruits themselves then remain greener in color, and they crunch much juicier.

Let's close about 6 liters.


For 1 liter of juice:

  • 2 table. spoons of salt,
  • 4 table. spoons of sugar,
  • 4 table. spoons 9% vinegar,
  • 2 cloves,
  • 4-5 peppercorns,
  • 1 bay leaf,
  • hot pepper,
  • 4 garlic cloves,
  • Dill umbrellas, horseradish leaves.

1. It is better to pick cucumbers in the morning and soak them in water for 1 hour.

2. Make tomato juice from cracked, large tomatoes. It can be extracted from fruits using a blender, food processor or meat grinder.

3. Measure the amount of juice obtained and pour it into the pan.


4. For 1 jar, cut 3 cloves of garlic, an umbrella of dill, a piece of horseradish root or leaf.

5. Cut off the ends of each cucumber and place tightly in liter containers.


6. Place an umbrella of dill and a piece of hot pepper on top. Cover with boiled metal lids.


7. Heat water to a boil and fill the contents of the liters with it for the first time. The cucumbers warm up for about 15 minutes. After this, add salt to the liquid.


8. In the meantime, let's go make tomato juice.

Place the saucepan with the tomato pulp on the stove and add seasonings.


We multiply the amount of ingredients by the volume you get.

Pour in the necessary seasonings; it is better to add vinegar after boiling. The mass must be mixed well so that crystals of salt and sugar are not felt at the bottom.


When you add the vinegar, let the juice boil again, while we go to drain the unnecessary water from the preparations.

9. Then immediately fill the jars up to the neck with boiling sauce and immediately screw them on.


And we wrap them in old warm clothes, there they will finish cooking, and also change color and become olive.

So they will stay for 2 days. Then they can be stored.

Spicy pickled cucumbers with chili ketchup in liter jars

To diversify the taste of approximately the same recipes, I advise you to use natural ketchup with hot pepper. We call these sauces “Chili”. Honestly, I don’t like this type of ketchup in this preparation; I prefer “Tomato” more and more. But it is better to add something sharper to this preparation.

Please note that here we do not use additional spices such as peppercorns or bay leaves. This is because they greatly enhance the shade of ketchup, and it becomes as if it is not so tender.

Read the ingredients of your purchases carefully. How natural are you buying the product? There should be no GMOs or additional preservatives.

  • 75 ml 9% vinegar,
