But on the other hand, this is just a safety net so as not to forget anything. Done - crossed out the point. Day one.

1. Purchase of products.

2. Stuffing food around the refrigerator

3. Dough and green beans in the freezer, the rest in the refrigerator

4. Peel the garlic (all). Use some for boiled pork, the rest goes into the refrigerator.

5. Marinate the boiled pork. Stuff a piece of pork with garlic, making punctures with a small knife and inserting garlic cloves into these punctures. One head of garlic should be enough. Then coat the piece of meat thickly with mustard on all sides. Place in a bowl or container, cover with foil, poke a few holes in the foil and place in the refrigerator.

6. Beef on Olivier salad. Pour water, salt, cook for 45 minutes after boiling. Remove from heat and cool without removing from the broth. Once it cools down, take it out, wrap it in film and put it in the refrigerator. Strain the broth and cook soup in it.

7. Salt the salmon. Cut 1/5 of the salmon. Season it with a tablespoon of salt, sprinkle with red pepper and finely chopped dill. Cover with lemon slices. Wrap in parchment (baking paper). If there is no parchment, grease several A4 sheets with vegetable oil and wrap the fish in this greasy paper. Leave for a couple of hours at room temperature, then put in the refrigerator.

8. Sort the liver. Watch carefully to make sure there is no bile. If you come across such a piece, it is better to cut it off or immediately throw it away from the chicken liver. Rinse the liver well, cut into smaller pieces (if beef or pork). Place in a bowl, cover with film, make a couple of holes in the film and put in the refrigerator.

Day two .

1. Cook potatoes, half of what you bought. Fill with water, salt and cook until tender. Then drain the water. Place the cooled potatoes in the refrigerator overnight. We'll clean it tomorrow.

2. Cook carrots. Almost all of it. We leave one carrot for the pate. Cook it the same way as potatoes.

3. Cook the beets. Just like potatoes and carrots. We cook all the vegetables separately and be sure to add salt during cooking.

4. Bake boiled pork. Wrap the marinated piece of meat in several layers of foil and bake for 1 hour 20 minutes at 150 degrees in the oven. Cool the cooked boiled pork without unwrapping it and put it in the refrigerator.

5. Transfer the salted fish from the refrigerator to the freezer.

6. Prepare roulade for cold cuts. We cut the chicken along the back, you can cut out the spine. Unfold skin side down. Remove the bones. We trim the wings and cut off the bone from the leg. We also cut the legs. You should get a layer of chicken meat on the skin. If you damage the skin somewhere when removing bones, it’s not at all scary. Beat the meat a little and add salt. Separately, stir 5-6 eggs with a fork and fry a thin omelette in a wide frying pan. Transfer the omelette to a layer of chicken meat and roll it up. Wrap the roll in two layers of cloth or gauze. Sew or tie. Place the wrapped roll in a saucepan. Fill with water so that the water covers the roll by 2-3 centimeters. Bring to a boil, then reduce heat to very low. Cook for an hour and a half. Remove the pan from the stove and leave to cool along with the roll. When it cools down, take out the roll and place it in a bowl, pressing something heavy on top. The remaining broth can be strained and cooked into soup - the New Year is still far away, don’t let your family die of hunger. Don’t throw away the bones from cutting up the chicken; put them in the refrigerator until tomorrow.

7. Cook pears for dessert in advance. Peel the pears, cutting them thinly with a potato peeler. We leave the cuttings. Place the pears in a saucepan. Mix 300 grams of sugar, 300 ml of water and the same amount of wine. Pour this mixture over the pears, bring to a boil and cook for 20 minutes. Remove the pan from the heat and leave the pears in the syrup to cool. When it cools down, take it out, put it in a plate, wrap it in film and put it in the refrigerator.

8. Wash the remaining potatoes well with a dishwashing sponge. And put it in the refrigerator.

9. Boil eggs. 10 pieces hard-boiled.

Day three. The most haymaking!

1. Peel boiled potatoes

5. Cut vegetables and meat into Olivier. Potatoes and carrots in one bowl. Pickled cucumbers separately. Meat (sausage) separately. Cover with film. We pierce the film in several places. We put it in the refrigerator.

6. Pour water over the green beans, bring to a boil, cook for 1-2 minutes, and drain in a colander. Cool, put in the refrigerator under film.

7. Chicken breasts. Trim the meat from the bone and cut it into strips. Place the meat in a bowl covered with film in the refrigerator. Bones - separately.

8. Pour water over chicken breast bones and whole chicken bones, add salt and cook after boiling for 40 minutes. Then place the bones in a colander; when they have cooled down, carefully remove all remaining meat from the bottom and chop finely. This chicken meat will be used as a filling for pancakes. And from the broth you can cook soup again or freeze it for hangover days.

9. Marinate two chickens, or duck or goose. Mix honey with a jar of mustard. We wash the bird and dry it, blotting it with napkins. And grease well with honey-mustard mixture outside and inside. Transfer the bird to a bowl and cover with foil. We poke holes in the foil - this should already become a habit - wrap it up - with a knife poke-poke-poke. Place in the refrigerator and let it marinate.

10. Valovany. Take the puff pastry out of the freezer and leave to defrost. It thaws very quickly - within an hour. While you are doing steps 12 and 13, it will already thaw. Unroll the dough roll. Use a glass to cut out circles. Each piece of dough makes approximately 14-16 circles. Place them on a baking sheet and bake for exactly 8 minutes in an oven preheated to 180 degrees. The finished ones are not rolled, but rather “puff layers”, cover with film and leave until tomorrow.

11. Wash the zucchini and paprika, cut into Hatei salad, and place in a bowl in the refrigerator under film.

12. Pate. Remove the liver. Add onions and carrots, cut into pieces. Salt and pepper. Bake in the oven for 40 minutes (stir while baking). Cool. Add butter, 1 stick. Pass through a meat grinder 2 times. Then mix well. Divide into 20 parts with wet hands. Roll each part into a ball and sprinkle with finely chopped herbs. Place the pate balls in the refrigerator under film.

13. Wash the apples.

14. Grate the head of garlic on a fine grater. Pour in vegetable oil, stir, put in the refrigerator.

15. Gherkins 3 pieces or one regular one pickled cucumber grate on a fine grater and put in the refrigerator.

16. Cut fresh salmon into large cubes without skin. For kebabs. Place in the refrigerator under film.

17. Unwrap the boiled pork, cut it, and put it in piles in the refrigerator under film.

18. Unroll the roulade from the fabric, cut into thin slices, wrap in film and put in the refrigerator.

19. Clean the sausage, cut it, put it under film in the refrigerator.

20. Carefully inspect the remaining vegetables. Maybe there will be enough of them to prepare a vinaigrette or a beet salad with cheese, for example.

21. Tomato sauce. Blend the tomatoes in their own juice with a blender or grind in a meat grinder. Add salt, sugar, vinegar. Bring to a boil, season with garlic (grated from the refrigerator, not all). Cool the finished sauce and put it in the refrigerator.

22. Pancakes. Make the dough and bake pancakes. Remove and place the stack of pancakes under film in the refrigerator.

Day four. Festive. We do everything slowly, without straining.

1. Set the table - tablecloths, plates, cutlery, wine glasses. Let's cover it early, don't be afraid. It won't cover you with dust.

2. Prepare caramel sauce for dessert. Melt two or three tablespoons of sugar in a dry frying pan or saucepan until caramel color. Then pour in the cream, slowly stirring the sugar. When we pour in all the cream, we continue to boil it until it thickens, and a little more. Stirring constantly with a whisk. Then remove and cool. You can immediately take a wide and slightly deepened plate and pour caramel sauce into it. When the sauce has cooled, place the pears that were poached in wine directly into the sauce. Tails up. Here, in fact, the gorgeous dessert is ready. You can immediately put it on the table.

3. Pancakes. Mix chicken pieces from the bones with Viola cheese. Lay out the pancakes and place the filling on the edge. Roll the pancakes into tubes and cut them in half diagonally. Place on a plate. Ready.

4. Take the herring under the fur coat out of the refrigerator, sprinkle the top with the yolks of boiled eggs, using a grater. All.

5. Take a piece of salted fish out of the freezer. After 15 minutes it will be thawed enough for slicing. Cut into thin pieces and place on a plate. Decorate with lemon slices and herbs.

6. Valovany. We take out the puff pastries. Using a sharp knife, carefully cut off the top of each roll. Place 10 valovans on one dish. Place a small piece of butter in the center of each. Add two-thirds of a teaspoon of red caviar on top of the oil. One can of 120 grams is enough for 10 valovanov.

Place 20 other valovans on another dish, also cutting off the tops. Place a ball of pate in the center of the valovan. Pierce the pate with a decorative skewer with half a cherry tomato strung on it. All.

7. Cold cuts. Place the boiled pork, roulade and sausage in a fan on a large flat dish. Garnish with the remaining cherry tomatoes and herbs.

8. Fish skewers. Sprinkle the fish pieces with salt and dry paprika. Add lemon juice and vegetable oil. Stir and leave for 5-10 minutes. Then thread it onto skewers. Place the skewers on a baking sheet. You need to bake them for 10 minutes at 200 degrees in a preheated oven. Therefore, I advise you to put them in the oven when the guests are already at the table. And don't forget to set the timer!!! To avoid drying out the kebabs.

9. Tartar. The simplest version of the sauce. Served with fish skewers. Mix grated cucumbers, sour cream and mayonnaise. Add grated garlic and finely chopped dill.

10. Marinate the potatoes in advance, but not too much in advance. Cut potatoes with skin into large slices, add salt, add paprika, pour in vegetable oil and stir well. Before baking, store in the refrigerator under film to prevent it from darkening.

11. Cook Khatey in two frying pans. On one, fry the chicken fillet in strips with soy sauce. On the second, fry the zucchini with paprika (salt), pouring lemon juice. At the end of frying, add green beans to the zucchini so that it has time to warm up with all the vegetables. Then mix the vegetables with the chicken and place the salad on a plate. Ready.

12. Olivier. Mix vegetables with meat (sausage), pickles. Add green peas, boiled eggs (chopped), mayonnaise. Stir and place on a plate.

13. Don’t forget to put the tomato sauce on the table. It goes very well with hot potatoes.

When guests arrive, you will be left with:

Preparation

First, divide the chicken breasts into portions (thickness - about 1.5 cm).

Afterwards, rub each piece with salt, pepper, seasonings and lightly beat with a kitchen hammer, having previously wrapped cling film. Next we remove the film.

Then, the prepared meat must be rolled well in flour and fried in a frying pan in vegetable oil until light golden brown.

Let's start preparing the filling. To do this, mix half a portion of grated cheese with herbs, garlic, mayonnaise and mustard.

Place each fried piece on a baking sheet lined with parchment, and cover the meat with filling on top. Add another layer of grated cheese on top.

Bake the finished pieces under the “fur coat” at 200 degrees for 15 – 20 minutes.

It is not necessary to use chicken for this dish. Pork will also work. But then you don’t need to fry it, but put it in the oven right away.

And cook for about 35 minutes. You can also add chopped tomatoes and sweet pepper or champignons fried with onions. You can also, instead of the specified filling, put a piece of canned pineapple on each chop, and sprinkle grated cheese on top and pour mayonnaise on top. It will also turn out very tasty.

Ingredients (2 servings):

  • drumstick 5 pcs.;
  • vegetable oil 2 tbsp;
  • whole walnuts 3;
  • lingonberries 50 g;
  • salt and pepper, seasoning for chicken;

  • fresh parsley 2 branches.

Preparation

  1. Lingonberries, wash the drumsticks, peel the nuts.

  • minced pork and beef 150 g each;
  • salt, pepper to taste;
  • onion 1 onion;
  • ready-made yeast-free dough 300 g;
  • yolk 1.

Preparation:

  1. Mix the minced meat with pepper, salt and finely chopped onion.
  2. Roll out the dough thinly (5 mm) and cut into narrow strips (“strings”).
  3. We form small meatballs and wrap them with dough like a ball.
  4. Place the prepared “kebabs” on a greased baking sheet, grease with yolk and bake for about an hour at 180 degrees.

Ingredients:

  • beef tenderloin 500 g;
  • bacon 40 g;
  • ham 70 g;
  • pickled cucumber 2 pcs;
  • chicken eggs 2;
  • vegetable oil(better than olive) 1 tsp spoon;
  • salt, pepper.

Preparation

  1. Beat the eggs with a fork, add a little salt and pepper.
  2. Lightly grease the pan with a silicone brush and heat it up. Place the eggs here and fry the omelette in the form of a large pancake.
  3. We cut the tenderloin along the grain and divide it into several portions (the width of each piece should be about 5 cm, length - 10 - 15 cm).
  4. We wrap each piece with cling film and beat it. Remove the film and sprinkle with pepper.

Ingredients:

  • 1 piece of pork pulp (a rectangle of tenderloin about 1 kg measuring approximately 12 x 22 cm);
  • onion peel from 7 medium onions;
  • parsley;
  • 1 -2 cloves of garlic;
  • salt;
  • seasoning for meat.

Preparation

  1. Cover the meat with cling film and beat with a kitchen hammer.
  2. Sprinkle the resulting rectangular layer with seasoning, pepper and salt, and on top with grated garlic and chopped parsley.
  3. We twist the layer with the filling into a roll and wrap it with thread. We pierce the meat with a needle in several places.
  4. We wash the husks and place them in a colander to drain all the water.
  5. Pour the husks into a saucepan, fill with water and place the roll here. You need enough water to cover the entire surface of the meat. Cook for 1.5 hours.
  6. Remove the finished roll from the water and place it on a paper towel for a few minutes.
  7. Next, rub the meat on top with garlic, wrap it in film and put it in the refrigerator.
  8. Before serving, remove the film and thread and cut into portions.

Ingredients (2 servings):

  • chicken fillet 0.5 kg;
  • hard cheese 100 g;
  • butter 70 g;
  • vegetable oil 10 g;
  • salt, pepper.

Preparation

  1. Cut along the fillet, cover with film, and beat. Remove the film, salt and pepper.
  2. Divide the cheese and butter into an equal number of servings (the same as the fillet servings) in the form of rectangles.
  3. Place a piece of butter and cheese on each fillet, roll it up and secure with a toothpick.
  4. Fry the pieces in a frying pan until golden brown, and then put them on a greased baking sheet and put them in the oven. Bake for about half an hour at 200 degrees.

Baked bird

Ingredients:

  • 1 whole chicken (1.5 kg);
  • 1 can of canned pineapple;
  • spices for chicken;
  • salt, pepper.

Preparation

  1. Cooking chicken carcass. We inspect to see if there are any hairs (if there are, pluck out and tar over the fire). Rinse well and dry with paper towels.
  2. Mix the spices with salt and rub the chicken with them.
  3. Stuff the carcass with pineapples and sew it up with thread.
  4. Place in a deep container and pour over pineapple syrup. Leave for 2 hours.
  5. Grease a baking sheet with vegetable oil and place the marinated chicken on it.
  6. Bake in the oven at 180 degrees for an hour and a half, basting with marinade every 20 minutes.

To prevent the legs from getting burned during baking, you can wrap them in foil and remove it when serving.

To make the meat juicier and there is no need to baste it, you can bake the carcass in a sleeve, immediately pouring marinade over it.

For the filling you can also use: pears, apples, fried mushrooms, buckwheat.

You can cook duck in the same way.

Ingredients:

  • turkey 1 carcass (about 4 kg);
  • melted butter 40 g

For the filling:

  • vegetable oil 2 tbsp;
  • pancetta (aka dry-cured brisket). Cut into 0.5 cm cubes 150 g;
  • 2 medium bulbs;
  • garlic 3 cloves;
  • chopped dry sage 2 tbsp;
  • roasted pine nuts 3 tsp;
  • grated zest of 1 lemon;
  • chopped parsley 0.5 cups;
  • fresh bread crumbs 2 glasses;
  • lightly beaten eggs 2.

  2. Mix the liver with eggs, flour, sour cream and beat in a blender until smooth. Salt.
  3. Grease a frying pan, the diameter of which is equal to the diameter of the future cake, and heat it up.
  4. Pour the liver mixture into a hot frying pan using a ladle to get a thin pancake.
  5. Fry over medium heat until done. You need to turn it over carefully, in one motion, so as not to tear the pancake.
  6. We fry separately. To do this, cut the onion into cubes and grate the carrots. Fry over medium heat with vegetable oil for about 10 minutes (the vegetables should not brown, but just become soft). Salt and pepper.

We prepare the curd mass from cottage cheese, sour cream, and salt. Ingredients for cooking:

  • It is better to buy pork carbonate with the skin - cut it into beautiful diamond shapes - 1-15 kg
  • Mayonnaise - a couple of tablespoons
  • Dijon mustard, sad - 1 tablespoon
  • Two cloves of garlic
  • Ground ginger
  • Ground rosemary

  • Diluted medical alcohol or vodka - 300 ml

Peel the bananas and cut off all the brown spots and chop. Separate the egg yolks from the whites (do this carefully, we only need the whites). Using a blender or mixer, beat the egg whites, banana pieces and condensed milk. Gradually pour alcohol into the resulting mass. We put it in a cold place to “ripen” and filter it after half an hour.
