  2. Leave in the room for 30-48 hours a day. The infusion should ferment. The time depends on the temperature in the room: if it’s cool, the process can take even 72 hours. It’s important not to miss the moment of readiness: it’s not very pleasant to drink fermented liquid.
  3. Strain the fermented jelly. Rinse the remaining flakes well.
  4. Leave the strained liquid and wait until a concentrated sediment accumulates at the bottom, without which it is impossible to prepare the starter.
  5. Pour the liquid into another container and transfer the sediment to a small container.
  6. 6 tbsp. l. pour 400 ml of cold water over the sediment, stir and place on the stove. Bring to a boil and cook for 4 minutes, remembering to stir so that there are no clots.
